peas, chili and ginger.
Samosa is one of the most popular
snack of Indian cuisine, samosa is deep fried snack
that can satiate your hunger pangs
and one of the best combinations to eat with samosa is
Green Chutney / Mithi chutney and
of course chai.
In this quarantine I know a lot of
you guys missing eating samosa, so here I’m sharing my
mum’s recipe, yeah everyone’s mum
makes amazing dishes and I love my Mum’s samosa
recipe. she made samosa better then
a halwai wala.

try that it deserves for obvious
reason.

| How To make Samosa? |
INGREDIENTS
FOR DOUGH :
- 4 cups of maida ( plain flour)
- 1/4 ajwain( carom seeds)
- Salt as per your taste
- 1/4 cup oil
- 1/2 cup water
FOR STUFFING:
- 2 tsp oil
- 1 tsp cumin/ jeera
- 1/2 tsp coriander seeds, crushed
- 1/2 fennel / Saunf
- 1 inch Ginger Finely chopped
- 2 chilies finely chopped
- 1/2 cup peas / matar
- 1/2 tsp Kashmiri red chili powder
- 1/2 Aamchur powder
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- 1/2 tsp Garam Masala
- 1/4 pepper (crushed)
- 3/4 Salt
- 4 potato (aloo boiled & mashed)
- 2 tbsp Coriander (finely chopped)
Other ingredients
- Water for sealing
- Oil for deep frying

Samosa dough preparation:
- Firstly in a mixing bowl take 2 cups of maida,you can also use wheat flour.
- Add 1/4 tsp ajwain, 1/2 Salt and mix it well.
- Now add 1/4 cup oil, mix it well. oil is key ingredient to make samosa flaky so don’t compromise.
- Crumble and mix it well.
- Add little by little water and start knead India a tight dough.Grease it with oil and rest for 20 minutes.
Samosa
stuffing preparation:
Step 1: Heat a pan, take 2 tsp oil and sauté 1 tsp cumin, ½ tsp
coriander seeds, ½ tsp fennel.(If you are using hing, add pinch of hing in this
state.)
Step 2: Add 1 inch chopped ginger and 1 green chili.
Step 3: Add ½ cup peas and sauté for 2 minutes.(if you’re using
soaked peas make sure to boil.
Step 4: Add ½ tsp chili powder, ½ tsp coriander powder, ¼ tsp cumin
powder,amchur powder ,garam masala,pepper and salt to taste and sauté on low
flame.
Step 5: Add boiled and mashed potatoes(around 4) and mix it well.
Step 6: Add finely chopped coriander leaves.
Shaping, Folding and stuffing
samosa:
Step 1: After
20 minutes, knead the dough again and make ball like we make for chapattis,
grease with oil.
Step 2:
Roll the dough into oval shape.(Remember: it should be slightly thick,not make
a round shape)
Step 3: Now cut it horizontally ,divide into 2 parts.
Step 4: Make a cone by greasing water around the edges of the samosa
sheet,stuff 2 tbsp samosa masala which we prepared.
Make
all the samosa.
Frying samosa:
Heat oil in the pan, once oil is hot
deep fry samosa in low flame.It will take good amount of time.Fry both the side,
once color turned golden and crisp, drain of over kitchen paper.
Enjoy samosa with green chutney and
tamarind chutney.
Notes:
- Fry samosa on Low flame only, otherwise samosa will not turn flaky
- You can add more green chilies if you like spicy samosa.
- You can add Ghee instead of oil while kneading a dough.
- You can also add paneer and veggies of your choice in stuffing.
